Sticky Buns (Apple Pecan Winter Squash Flax Vegan Sticky Buns)



  • 1 cup  unsweetened flax milk (any type of milk product)
  • ¼ cup vegan butter
  • 2 1/4 tsp yeast
  • 1 Tbsp sugar
  • 1/4 tsp salt
  • ~3 cups all-purpose flour
  • 2 Tbsp flax meal
  • ½ cup winter squash puree


  • 1/4 cup vegan butter, melted
  • 1/2 cup brown sugar
  • 1-2 tsp cinnamon


  • 1 cup brown sugar
  • 1/2 cup vegan butter
  • 2 Tbsp vegan creamer
  • 1/2 cup pecans, chopped
  • 1 chopped apple



Heat milk and butter in a sauce pan till butter is melted, cool slightly. Combing with yeast in a mixing bowl, let sit for 10 minutes. Add sugar, salt, flax meal and squash stir, and then add flour in small amounts, dough will be sticky. Knead for about 10 minutes by hand on a floured surface or with a mixer using a dough hook. Place dough in a clean lightly oiled bowl, cover with a damp towel and let rise about an hour.


While dough is rising make sticky caramel. Combine the butter and brown sugar in a sauce pan, cook on medium and stir. After a minute or so add the cream, cook and let bubble for another minute, remove from heat, pour caramel in a baking dish coating the bottom. Sprinkle the pecans and chopped apple on the caramel.

Once dough has doubled in size roll into a thin rectangle and spread the filling over the surface of the dough. Tightly roll dough, sealing the edges. Cut into 1-2 inch pieces. Arrange in baking dish and let proof for about 30 minutes. Bake in 350 degree oven for between 20-30 minutes. Let cool for 1 minute, and then invert buns onto a plate.OLYMPUS DIGITAL CAMERA
